The thoroughbred of Greek wine returns with yet another worthy follow-up. Sigalas's basic Assyrtiko is intoxicating on the nose with its signature notes of citrus, minerality, herbs, and seaside salinity that are just hint at what is to follow. On the palate, this is a ripe and concentrated expression that is most tongue-staining, just echoing throughout and finding focus for a lingering finish. There is abundance of nuances — gobs of sundrenched fruit, green apples, lemon, lime, grapefruit, prickly spice, white pepper, fennel, green herbs, straw, and huge underlying salinity and chalkiness. Domaine Sigalas is widely regarded as one of Greece’s most iconic and consistent wineries, leading the charge in showcasing the extraordinary potential of Assyrtiko and the unique terroir of Santorini. Founded in 1991 by Paris Sigalas, the domaine is located in Oia, in the northern part of the island, and cultivates vines on ancient volcanic soils shaped by millennia of geological activity and centuries of tradition. The vineyards are ungrafted—planted on original rootstock—thanks to Santorini’s phylloxera-resistant terroir, and many vines are over 60 years old, trained in the traditional kouloura (basket) method to shield them from harsh winds and intense sun. Sigalas pioneered a rigorous, terroir-focused approach, working parcel by parcel and elevating Assyrtiko from a regional specialty to a world-class white varietal. Today, the estate continues to set the benchmark for precision, minerality, and aging potential in Greek white wines.
