The Causica Rosé de Saignée Extra Brut NV is a strikingly vivid and vinous Champagne, made entirely from Pinot Noir using the saignée method—a rare and meticulous process in Champagne that involves bleeding juice off the skins after short maceration. This technique results in a rosé of deep color, intensity, and structure. Fermented with indigenous yeasts and aged on the lees before release, the wine is finished with minimal dosage to preserve its purity and edge. On the nose, it opens with aromas of wild strawberry, raspberry coulis, blood orange, rose petals, and a hint of black pepper and chalk. The palate is textured and vibrant, with fine mousse, zesty acidity, and a mineral-laced backbone. There’s a beautiful interplay between fruit depth and saline precision, making it not just an aperitif rosé but a true gastronomic Champagne. Ideal with charcuterie, duck breast, or tuna tartare, this is a bold, expressive cuvée that embodies the soul of artisanal rosé Champagne.<
Champagne Lointier is a boutique, grower-producer estate based in the village of Celles-sur-Ource in the Aube’s Côte des Bar, a region gaining serious recognition for its expressive, terroir-driven Champagnes. Led by the Lointier family, the estate champions sustainable viticulture and low-intervention winemaking, working exclusively with estate-grown fruit from Kimmeridgian and limestone soils. The Côte des Bar, traditionally overlooked in favor of the Marne, is now recognized for producing some of the most characterful Pinot Noir in the region, and Lointier is among a new generation of vignerons bringing energy, transparency, and precision to their cuvées. The house style emphasizes purity, texture, and minimal dosage, with a clear focus on vineyard expression and balance. Their “Causica†line highlights single-parcel and method-specific bottlings—crafted in micro quantities and highly sought after by Champagne purists.
