The 2023 Paul Pillot Bourgogne Aligoté is a strikingly fresh and linear expression of this historic but often underappreciated Burgundian grape. Sourced from old vines in the Côte de Beaune, the wine is vinified and aged with a light touch—typically in stainless steel and used oak—to preserve its vivid aromatics and crisp structure.
