The 2023 Paul Pillot Bourgogne Aligoté is a strikingly fresh and linear expression of this historic but often underappreciated Burgundian grape. Sourced from old vines in the Côte de Beaune, the wine is vinified and aged with a light touch—typically in stainless steel and used oak—to preserve its vivid aromatics and crisp structure. The 2023 vintage delivered healthy, balanced fruit, and this Aligoté captures that clarity with a lively bouquet of lemon zest, green apple, crushed white flowers, and chalky minerality. On the palate, it is light to medium-bodied, with zippy acidity, a subtle saline edge, and a mouthwatering finish that makes it both refreshing and food-friendly. Domaine Paul Pillot, based in Chassagne-Montrachet, is one of the most exciting white wine producers in Burgundy today. Under the direction of Thierry Pillot since the early 2000s, the domaine has ascended rapidly in reputation, gaining acclaim for its racy, terroir-driven whites that emphasize purity, minerality, and finesse over opulence. Thierry employs minimal intervention in the cellar—native yeast fermentation, limited bâtonnage, and restrained oak use—to preserve the energy and transparency of each wine.
