The 2023 Paul Pillot Chassagne-Montrachet is a strikingly refined village-level white Burgundy, sourced from multiple lieux-dits within the appellation and vinified with the same care as the domaine’s top crus. The 2023 vintage yielded fresh, aromatic wines with excellent tension—ideal for Pillot’s style. Whole-cluster pressed and fermented with indigenous yeasts, the wine is aged in mostly neutral French oak barrels to preserve vibrancy and site character. In the glass, it opens with a restrained yet detailed bouquet of lemon zest, white peach, crushed shell, hazelnut, and delicate floral notes.
