The 2023 Paul Pillot Saint-Aubin 1er Cru Les Charmois is a racy and refined Chardonnay that brilliantly showcases the tension and chalky minerality characteristic of Saint-Aubin’s best sites. Les Charmois, located near the border with Chassagne-Montrachet, sits on stony, limestone-rich soils with excellent exposure, producing wines that echo the structure and elegance of its more famous neighbors. The 2023 vintage brought clarity and lift, ideal for Pillot’s style. Whole-cluster pressed and fermented with native yeasts, the wine is aged in mostly neutral oak to preserve its brightness and aromatic definition. On the nose, it offers vibrant aromas of citrus blossom, green apple, crushed limestone, white peach, and subtle almond skin. The palate is tense and precise, with lively acidity, a sleek, mineral spine, and a long, saline finish. Thierry employs minimal intervention in the cellar—native yeast fermentation, limited bâtonnage, and restrained oak use—to preserve the energy and transparency of each wine. Though best known for exceptional premier crus in Chassagne such as La Romanée and Les Grandes Ruchottes, even the domaine’s more modest bottlings—like their Bourgogne Aligoté—are crafted with the same attention to detail and are sought after by sommeliers and collectors for their vibrancy and precision.
