The 2023 Paul Pillot Santenay Vieilles Vignes is a beautifully balanced, expressive red Burgundy that marries the rustic charm of Santenay with the lifted, elegant style that defines the Pillot approach. Sourced from mature vines rooted in classic clay-limestone terroir, the wine is fermented with indigenous yeasts and aged in mostly used oak barrels, allowing the purity of the fruit and terroir to come forward without excess influence from wood. On the nose, it opens with perfumed aromas of wild cherry, red currant, violet, rose petal, and subtle spice. The palate is medium-bodied and finely textured, with fresh acidity, silky tannins, and a mineral backbone that carries through a graceful, savory finish. The 2023 vintage brings notable freshness and aromatic clarity, making this a particularly vibrant and versatile expression of Santenay.
Domaine Paul Pillot, based in Chassagne-Montrachet, is one of the most exciting white wine producers in Burgundy today. Under the direction of Thierry Pillot since the early 2000s, the domaine has ascended rapidly in reputation, gaining acclaim for its racy, terroir-driven whites that emphasize purity, minerality, and finesse over opulence. Thierry employs minimal intervention in the cellar—native yeast fermentation, limited bâtonnage, and restrained oak use—to preserve the energy and transparency of each wine. Though best known for exceptional premier crus in Chassagne such as La Romanée and Les Grandes Ruchottes, even the domaine’s more modest bottlings—like their Bourgogne Aligoté—are crafted with the same attention to detail and are sought after by sommeliers and collectors for their vibrancy and precision.
