The 2022 Vincent Dauvissat Chablis 1er Cru La Forest is a profound, deeply etched expression of one of Chablis’s greatest premier cru sites. La Forest, located on the left bank of the Serein River, is known for its Kimmeridgian limestone soils and southeast exposure, which provide both ripeness and structure. Dauvissat’s vines here average over 50 years of age and consistently yield wines of remarkable density and mineral intensity. The 2022 vintage was warm and relatively dry, but with enough cool nights to preserve the acidity and precision Dauvissat’s wines are known for. In the glass, the wine opens with focused aromas of green apple, lemon pith, oyster shell, flint, and white flowers, with a hint of hazelnut and subtle lees influence. The palate is chiselled and saline, with vivid acidity, compact citrus and orchard fruit, and a long, chalk-drenched finish. Vincent Dauvissat is one of the undisputed masters of Chablis, producing wines of unparalleled purity, depth, and longevity. Based in the village of Chablis itself, the Dauvissat family has been making wine since the 1920s, with Vincent taking over in the 1970s and further refining the estate’s already meticulous approach. The domaine farms organically (though uncertified), and all fruit is hand-harvested—relatively rare in Chablis—resulting in naturally balanced grapes that reflect site and vintage with exceptional clarity. Vinification is traditional: indigenous yeasts, fermentation in enamel and stainless steel, followed by aging in old oak barrels, including large foudres.
