A jeweled red color, the 2019 Brunello Di Montalcino La Cerbaiola is wonderfully detailed on the nose with aromas of ripe cherries, cedar, dried roses, fresh leather, and mint. Salvioni is one of the most revered names in Montalcino, known for producing tiny quantities of traditionally styled, deeply expressive Brunello. Founded in the 1980s by Giulio Salvioni, the estate is based at Podere Cerbaiola, a small property near the village of Montalcino, with just under 4 hectares of vines planted exclusively to Sangiovese Grosso. The vineyards sit at around 420 meters above sea level on rocky, galestro-rich soils, and are farmed with low yields and absolute attention to detail. Now led by Giulio’s son, David Salvioni, the estate continues to uphold a minimalist, hands-off approach: spontaneous fermentations, long macerations, and aging in large Slavonian oak casks. With production limited to just a few thousand bottles, Salvioni’s wines are cherished by collectors and purists alike for their intensity, balance, and age-worthiness, reflecting both their noble terroir and artisanal origins.
