Produced from rigorously selected Sangiovese (97%) and Canaiolo (3%) grapes. The fermentation and maceration is carried out in concrete and steel tanks for about 18/20 days. Subsequently the wine is aged in French oak barrels and casks, for a time that varies, according to the characteristics of the wine, from 16 to 20 months. After bottling, it is refined in glass for about 6 months. It is an aging wine that well expresses the potential of the lands of San Giusto a Rentennano.
Dating back to the ninth century when it was built as a monastery, San Giusto a Rentennano is the epitome of a historic estate, serving as a military fortress and as home to Baron Bettino Ricasoli, who created the original formula for Chianti in 1874. Purchased by the Cigala family in the mid-twentieth century, this 395-hectare estate nestled in the Siena foothills currently is held in the capable and humble hands of Luca Cigala, along with his siblings Francesco and Elisabetta. Organic since 2008, San Giusto a Rentennano crafts a full range of traditional Tuscan wines with grace, elan and beauty--including the Super-Tuscan La Ricolma, one of Italy's finest Merlots.
